  • 1 15 oz canCasa Fiesta Black Beans, Rinsed and Drained
  • 1 15 oz can Casa Fiesta Peruano Beans, Drained
  • 1 15 oz canCasa Fiesta Chipotle Beans, Drained
  • 1 Avocado, Diced
  • 1Green Bell Pepper, Diced
  • 1 Red Bell Pepper, Diced
  • 1 10 oz packageFrozen Corn Kernels
  • 1Med Red Onion, Diced
  • 1/2 cupOlive Oil
  • 1 tbspFresh Lime Juice
  • Lime Zest
  • 1/2 tbspLemon Juice
  • 1 tbspSalt
  • 1 cloveGarlic, Crushed
  • 1 tbspWhite Sugar
  • 1/4 cupChopped Cilantro
  • 1/2 cupGround Cumin
  • 1/4 cupGround Coriander
  • 1/2 cupGround Black Pepper
  • 1 dashLouisiana Original Pepper Sauce
  • 1/2 dashMexene Chili Powder

Directions

  • In a large mixing bowl, combine beans, avocado, bell peppers, frozen corn, and red onion.
  • In a small mixing bowl, whisk together olive oil, red wine vinegar, lime juice, lime zest, lemon juice, sugar, salt garlic, cumin, coriander, and black pepper.
  • Season to taste with hot sauce and chili powder.
