Chipotle Chicken Tacos

Yields: 8 tacos Preptime: 30 minutes Cook time: 5 minutes

Ingredients

  • 1 lb Boneless, Skinless, Chicken Breast or Thighs
  • 2 7 oz cansCasa Fiesta Chipotle Peppers in Adobo Sauce
  • 1 canChicken Broth
  • 1/2 cup Honey
  • 2 tbspGound Cumin
  • 1 8 oz pkgSoft Flour Tortillas
  • 1 8 oz jarCasa Fiesta Salsa
  • 1 8 oz pkgShredded Lettuce
  • 2Tomatoes, Diced
  • 1 16 oz containerSour Cream
  • 1 cupShredded Mexican Cheese

Directions

  • In a blender, combine chipotle peppers in adobo sauce, chicken broth, honey and cumin.
  • Blend on high speed for 30 seconds, or until peppers are blended thoroughly.
  • Pour mixture into a gallon storage bag and add chicken breasts or thighs.
  • Marinate for 30 minutes.
  • Grill chicken until internal temperature has reached 165°F or the juices run clear.
  • Thinly slice or cube the chicken, set aside.
  • Warm tortillas on grill or in oven and assemble tacos by placing chicken in the tortilla and adding Casa Fiesta Salsa, lettuce, tomatoes, sour cream, and Mexican Cheese if desired.
