Quesadilla Pie

Yields: varies Preptime: 10 minutes Cook time: 50 minutes


  • 4large flour tortillas (9-10 inches)
  • butter
  • 1lb grated cheese (mild or sharp cheddar, or Monterey Jack)
  • 1can Casa Fiesta refried beans (optional)
  • 1can Casa Fiesta diced green chilies, dreained (optional)
  • to tastetomatoes, chopped (optional)
  • to tasteonions, chopped (optional)
  • to tastemushrooms, sliced (optional)
  • 1lb cooked chicken, beef, or pork, shredded (optional)
  • 1can Casa Fiesta jalapenos, sliced or diced (optional)
  • 1avocado, chopped (optional garnish)
  • 1bunch cilantro, chopped (optional garnish)
  • to tasteiceberg lettuce, thinly sliced (optional garnish)
  • 1dollop sour cream (optional garnish)
  • 1can Casa Fiesta salsa (optional garnish)


  • Preheat oven to 350°F.
  • Butter bottom and sides of a pie dish approximately the same size as your tortillas.
  • Place one tortilla on the bottom of the pie dish.
  • Sprinkle shredded cheese over tortilla along with other ingredients of choice for this layer.
  • Place another tortilla and sprinkle with cheese and other ingredients of choice, continue layering as needed.
  • After you have your last layer complete, top with an additional tortilla and brush butter on the surface.
  • Cover dish with aluminum foil.
  • Bake in oven for 30 minutes on 350°F
  • Remove foil and cook on 400°F for an additional 20 minutes, until top is lightly brown and the cheese is melted.
  • Let cool for 10 minutes.
