Chorizo Tostadas

Ingredients

  • 8Yellow or White Corn Tortillas
  • 1 12 oz tubeBeef or Pork Chorizo
  • 4 tbspCumin
  • 1 tbspMexene Chili Powder
  • 1/2 cupCilantro, Chopped
  • 1Med Onion, Diced
  • 1 canCasa Fiesta Refried Beans
  • 1/2 cup Diced Tomatoes
  • 1 cupMexican Blend Shredded Cheese
  • 2 cupsVegetable Oil

Directions

  • In a sauté pan, brown chorizo and half of diced onions.
  • Add cumin, cilantro, and Mexene.
  • Add the refried beans, mix well and keep warm.
  • In a sauce pot, pour vegetable oil and heat on medium-high heat or until oil reaches 350 °F.
  • Once oil is ready, fry tortillas until golden brown and drain on paper towels.
  • Spread the chorizo and refried bean mixture on tortillas, top with shredded cheese, then top with the remaining onions, cilantro and tomatoes.
