Southwest Venison Burgers

Ingredients

  • 3 lbsGround Venison
  • 1 lbGround Pork
  • 2 cupsItalian Bread Crumbs
  • 2 Lg Eggs
  • 2/3 cupMesquite BBQ Cajun Injector
  • 1 1/2 tbspCajun Shake
  • 2 tspGarlic Powder
  • 1 8 oz jarCasa Fiesta Whole Jalapeños
  • 1 pkg Cajun Injector Chicken Fry
  • 1 cupCajun Injector Cottonseed Oil
  • 8 slicesPepper Jack Cheese
  • 1 pkgHamburger Buns

Directions

  • In a large bowl, combine the first 7 ingredients and mix by hand until thoroughly combined.
  • Portion meat into burgers and cook on a charcoal or gas grill.
  • Drain the jalapeños, cut into strips lengthwise and pat dry with a paper towel.
  • Batter according to the directions on the Cajun Injector Chicken Fry Mix and fry in Cajun Injector Cottonseed Oil at 350°F until golden brown.
  • Remove and set aside.
  • To serve, place a slice of pepper jack cheese on the burger and tip with fried jalapeño strips.
